Carol Ronnfeldt was born to Thomas and Elsia Eby in Alder, Montana on March 31, 1928, where she joined her older brother - Lee Eby. The two endured a challenging childhood that included two years in an orphanage followed by several years moving from town to town with their parents across the Pacific Northwest during the post-depression years. As a young teenager Carol worked as a waitress, a chambermaid and at the tender age of sixteen held a brief job as a sheet metal worker in Bremerton, Washington. She ultimately found her calling in the restaurant business as a cook, hostess and manager. She owned a small café, appropriately called Carol’s Café, in Silverdale, Washington and later managed a restaurant and cocktail lounge in Warden, Washington. She moved to Spokane, Washington in 1969 where she stayed for nearly 40 years. She continued working in the restaurant business until retiring with a disability in 1973. In 1971 she met and married her third husband, Emil Ronnfeldt. He passed away in 1983. While in Spokane Carol was a long-time member of the Moose Lodge (#161), the VFW (#1435), the Elks (#228) and the Eagles (#3564). During the spring and summer months she spent time gardening – especially tending to her roses and daffodils. Other pastime activities included sewing, crocheting and embroidery. In 2008 Carol moved to Texas. She enjoyed being independent, cooking her own meals and keeping an immaculate home up until the time that her kidneys failed. She found great comfort during her final years living in her own apartment at The Enclave in Round Rock, Texas. She leaves behind two sons from earlier marriages. Hal Thilmony and his wife Priscilla who live in San Luis Obispo, California and Randy Copper and his wife Dee who live in Round Rock, Texas. She has six granddaughters and one grandson as well as thirteen great grandchildren. Following her cremation in Texas, Carol will be interred in the Apostle’s Court at the Spokane Memorial Garden Cemetery next to her mother (Elsia) and late husband (Emil). May she forever rest in peace.
